Para comenzar esta sección, nada más sugerente que una receta de Filipinas: el pancit (pansit), que es uno de sus platos más tradicionales, junto con el famoso adobo y los rollitos Lumpiá.
Existen muchas variantes del pancit porque cada familia aporta su toque personal. Igual que en España sucede con la paella, el cocido, y ciertos platos populares que pasan de generación en generación.
La fórmula que ofrecemos, es de la madre de Isabel y es perfecta como plato único. Está realizada a base de verduras, carnes y fideos de arroz salteados.
El pancit no queda bien si se utiliza pasta fresca o tallarines, en vez de fideos de arroz( admite otra variante que son los fideos al huevo).
Los fideos de arroz son blanquecinos, vienen secos y se pueden adquirir en tiendas de productos orientales, o en algunas grandes superficies como Hipercor o los supermercados de "El corte Inglés". No hay que confundirlos con los fideos de soja, que son transparentes pero distintos de sabor y textura.
Para cocinarlos, se sumergen unos minutos en agua o caldo caliente (apartando la cacerola del fuego), se mueven con un tenedor para que se vayan separando y se escurren, para posteriormente utilizarlos.
Una última observación: en Filipinas no se utiliza el aceite de oliva como aquí. Es bastante habitual emplear el aceite de girasol.
INGREDIENTES PARA 4 PERSONAS:
Para los fideos:
400 gramos de fideos de arroz o de huevo
2,5 litros de agua o caldo
1 cucharadita de sal
Para las carnes:
135 gramos de carne de cerdo picada
135 gramos de carne de ternera picada
135 gramos de pechuga de pollo picada
1 y ½ cucharadas soperas de brandy
1 cucharada sopera de salsa de soja
pimienta negra
nuez moscada
1 cubito desmenuzado de caldo de pollo
Para el salteado de gambas:
150 gramos de gambas
1 cucharada sopera de brandy
1 cucharada sopera de salsa de soja
1 cucharada sopera de aceite de oliva
Para el salteado:
1 cebolla blanca
2 zanahorias
5 judías verdes
½ calabacín
¼ de puerro
½ pimiento rojo
½ pimiento verde
150 gramos de col china ó repollo
Para acompañar:
Salsa de soja
Zumo de limón o lima
PREPARACIÓN:
-Mezclar bien los tres tipos de carne, sazonarlos con la pimienta y la nuez moscada, adobarlos con la soja y el brandy, y dejarlos macerar en un bol, mientras preparamos el resto de los ingredientes.
-Pelar y picar la cebolla y el puerro en tiras finas (en juliana). Quitar las hebras a las judías verdes y trocearlas también en juliana. Hacer lo mismo con las zanahorias- una vez peladas-, con la col china o el repollo.
-Lavar el calabacín, y sin pelarlo, trocearlo de la misma manera. Una vez lavados y despepitados, trocear los pimientos en finas tiras. Reservar todas las verduras sin mezclarlas.
-Pelar y trocear las gambas. Reservarlas.
-En una sartén amplia, o en un WOK, verter el aceite y saltear las carnes, espolvoreando el cubito de pollo. Deben quedar sueltas, y no en bolas. Se desmenuzan a medida que se saltean con el canto de una espumadera, o espátula, si se utiliza el WOK.
-Una vez salteadas, añadir las verduras por orden de dureza: primero la cebolla, el puerro, las judías verdes, los pimientos y las zanahorias. Después el calabacín y el repollo. Saltearlas rápidamente, procurando que no se hagan en exceso. Han de quedar ligeramente crujientes.
-Mientras tanto, en otra sartén con aceite, saltear unos 2 minutos las gambas troceadas junto con la soja y el brandy. Luego incorporar el contenido de esta sartén, a las carnes y verduras, mezclándolas con cuidado.
-Para hacer los fideos, calentar agua o caldo en una cacerola con una cucharada de sal. Cuando hierva, echar los fideos, retirar la cacerola del fuego y taparla. Dejarla unos 2 ó 3 minutos, siguiendo las instrucciones de uso del envase, desenrollarlos con un tenedor o pinzas y escurrirlos rápidamente cuando estén blandos. Luego incorporarlos a las verduras, y remover cuidadosamente. Añadir pimienta negra al gusto y un poco más de salsa de soja si se quiere.
-Servir inmediatamente, acompañado de un cuenco de salsa de soja mezclada con lima, o limón, para que cada comensal aderece el pancit a su gusto.
** Consejos:
Hay que tener cuidado con la salsa de soja, algunas contienen mucha sal, y el plato podría resultar demasiado salado e incluso ocultar su sabor.
Recomendamos la marca KIKOMAN, que se encuentra fácilmente en grandes superficies. Existe una versión light, que es de bajo contenido en sal, pero más difícil de encontrar. Sólo puede adquirirse en tiendas japonesas y es deliciosa. Es mejor que el plato quede ligeramente soso y luego aderezarlo, que pasarnos con la soja y estropearlo.
Las verduras deben quedar crujientes, y no crudas, y la pasta, al dente. De lo contrario, el plato pierde toda la gracia. Podría compararse a una paella con el arroz pasado, es decir, pastosa.
Las verduras deben trocearse del mismo tamaño para que el sabor sea más equilibrado.
Esta receta admite variantes. Hay quien le añade apio, chiles frescos (picantes), algo de jengibre... o simplemente utiliza solo pollo, o cerdo. Todo depende de sus gustos e imaginación.

Mariang Taga Barrio was shown in the Philippines, the Tagalog dubbed version of Thalia's hit Maria La Del Barrio, during which Thalia performed at the Araneta Coliseum in Manila to a sold out crowd. Because really, can we Filipinos ever get enough Thalia? I don't think so, I think Filipinos don't get enough Thalia and they miss her like crazy, and this Pinoy blog is here to fill that void for you guys back home and for Pinoys overseas for a little bit of childhood nostalgia of the 90s. And this song by Thalia, hearing it in Tagalog, and the words, it's just so spiritual.

For Pinoy English-only speakers, barrio is a Spanish word used in the Philippines and Latin America meaning "neighborhood", but it's general use is synonymous with poor neighborhoods where poor people live, like Thalia's character in this novela. This song and the telenovela Mariang Taga Barrio also defines perfectly the Filipino culture, because of our spirit, of the struggle over adversity, and the cultural aspects and social systems of haciendas, servidumbre, social mores of the Spanish speaking world that are also a part of the Philippines due to our shared history, which is why Spanish telenovelas are extremely easy to dub, easier than Chinese, Japanese or Korean series, Spanish language telenovelas are easier to dub without losing the cultural context, because we share the same Spanish cultural aspects in our history and culture as Latin America, so it translates easily to Tagalog, because it is our culture to begin with, something that many Filipinos don't even realize, the Spanish culture belongs to us, Filipinos keep referring to the Spanish language, Spanish telenovelas, and having Spanish blood as foreign, even to this day, which is ridiculous, because it's no longer foreign. It stopped being foreign centuries ago, because it's a part of our national Filipino culture, Filipinos, especially young Filipino kids overseas, would like to erase everything that happened during the Spanish occupation in the pursuit of a "pure Asian identity" which in reality doesn't exist and doesn't make any sense, but you take those parts away, those parts that developed during that time period, you take away your own family history, your customs, all the happy Noche Buenas, the traje de bodas of your ancestors, the traje de mestiza, the lechon, the processions, the patron saints, our Lolas' rosaries, can you imagine being Filipino without all those things and memories that we cherish and hold dear to our hearts? Of course not. Not only are our people mestizo, our culture is mestizo, you take one element out of the many elements, it won't be complete. The Filipino culture is not "Filipino elements mixed with Spanish", it's MALAY elements mixed with Spanish, the equation and result of all that mixture is Filipino. Isabel Preysler watches Julio Iglesias Concert

Julio sang Spanish versions of 80s hits like Cyndi Lauper's Time After Time, as well as his hits like 'Dejame Volar'. Julio Jose is Isabel's first son with ex-husband Julio Iglesias. Enrique Iglesias is her second son.
Isabel and daughter Ana were the loudest to applaud, and the pride Isabel felt for her son was present on her face. "I can't be objective because he's my son, but he was phenomenal," said Isabel on Julio's performance.
